Description

Deliciously moist muffins combining the rich flavors of pumpkin and sweet apples, perfect for fall.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup pumpkin puree
  • 1/2 cup diced apples
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon pumpkin spice
  • 1/4 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup crumb topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, sugar, brown sugar, baking powder, baking soda, pumpkin spice, and salt in a large bowl.
  3. Combine the pumpkin puree, diced apples, vegetable oil, egg, and vanilla extract in another bowl.
  4. Pour the wet mixture into the dry mixture, folding gently with a spatula until just combined.
  5. Divide the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  6. Sprinkle crumb topping over each muffin if desired.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Cool slightly in the tin before transferring to a wire rack.

Notes

Feel free to customize with nuts or dried fruits. Store in an airtight container for up to 3 days or freeze for 3 months.
