- 1 cup all-purpose flour
- 1/2 cup pumpkin puree
- 1/2 cup diced apples
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon pumpkin spice
- 1/4 teaspoon salt
- 1/2 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup crumb topping (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Whisk together the flour, sugar, brown sugar, baking powder, baking soda, pumpkin spice, and salt in a large bowl.
- Combine the pumpkin puree, diced apples, vegetable oil, egg, and vanilla extract in another bowl.
- Pour the wet mixture into the dry mixture, folding gently with a spatula until just combined.
- Divide the batter evenly into the prepared muffin cups, filling each about two-thirds full.
- Sprinkle crumb topping over each muffin if desired.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Cool slightly in the tin before transferring to a wire rack.
