Description

Boston Cream Pie Cookie Bites are a delightful dessert that combines the flavors of a classic Boston cream pie in a bite-sized cookie form.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1/2 cup powdered sugar
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Drop tablespoon-sized balls of dough onto the prepared baking sheet.
  7. Bake for 10-12 minutes or until the edges are set.
  8. Let the cookies cool completely on a wire rack.
  9. In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  10. Once the cookies are cool, pipe or spread the whipped cream onto half of the cookies and top with another cookie to create a sandwich.
  11. Melt the chocolate chips and drizzle over the cookie sandwiches.

Notes

  • Store in an airtight container for up to 3 days.
  • For a richer flavor, use dark chocolate chips.
  • These can be made ahead of time and frozen for later use.
