Description

Delightful cookies with a crisp exterior and a gooey fruit filling, reminiscent of classic pop tarts.


Ingredients

  • 1 cup brown sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • Powdered sugar for dusting
  • Pop tart filling of choice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the brown sugar and softened butter until smooth and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Whisk together the flour, baking powder, and salt in another bowl.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Roll dough into 1-inch balls and flatten them slightly.
  7. Place a small spoonful of filling in the center of each disc and fold to seal.
  8. Arrange cookies on a baking sheet and bake for 10-12 minutes until lightly golden.
  9. Allow to cool slightly, then dust with powdered sugar before serving.

Notes

For a quicker option, use store-bought pie crust. Cookies can also be frozen for up to three months.
