- Powdered sugar for dusting
- Pop tart filling of choice
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the brown sugar and softened butter until smooth and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Whisk together the flour, baking powder, and salt in another bowl.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Roll dough into 1-inch balls and flatten them slightly.
- Place a small spoonful of filling in the center of each disc and fold to seal.
- Arrange cookies on a baking sheet and bake for 10-12 minutes until lightly golden.
- Allow to cool slightly, then dust with powdered sugar before serving.
Notes
For a quicker option, use store-bought pie crust. Cookies can also be frozen for up to three months.
