- 1 pound boneless, skinless chicken breast (diced)
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 cups chicken broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced chicken, seasoning with salt, pepper, garlic powder, and onion powder. Cook until browned, about 5-7 minutes.
- Stir in the orzo and chicken broth, bringing to a rolling boil.
- Reduce the heat to low, cover, and simmer for about 10 minutes until the orzo is tender.
- Add the broccoli florets, cover again, and cook for an additional 5 minutes.
- Remove from heat and stir in the shredded cheese until melted and creamy.
