- 4 flour tortillas
- 2 cups shredded cooked chicken
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/4 cup hot honey
- 1/2 cup sour cream
- 1–2 jalapeños, minced
- 1 tablespoon lime juice
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Mix the filling: In a mixing bowl, combine your shredded chicken with hot honey, adding salt and pepper to taste.
- Heat the skillet: Place a skillet over medium heat and drizzle in a bit of olive oil.
- Assemble the quesadilla: Lay one tortilla in the skillet. On one half, layer the chicken mixture generously and sprinkle with cheese. Fold the other half over.
- Cook to perfection: Allow it to cook for 3-4 minutes until golden brown. Then, carefully flip and cook the other side for another 3-4 minutes.
- Prepare the spicy jalapeño cream sauce: In a bowl, mix sour cream, minced jalapeños, and lime juice. Add salt to taste.
- Serve and savor: Slice the quesadillas into wedges and serve warm with the spicy jalapeño cream sauce.
Notes
You can use rotisserie chicken for convenience. Customize with additional ingredients like black beans or corn.
