- 1 pound chicken breast, cubed
- 1 cup long-grain rice
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 celery stalk, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 1 tablespoon Cajun seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup frozen peas
- 1/2 cup green onions, sliced
Instructions
- Combine the cubed chicken, rice, chopped onion, bell pepper, celery, minced garlic, diced tomatoes with their juice, chicken broth, Cajun seasoning, salt, and black pepper in your slow cooker.
- Stir gently to mix everything without breaking the rice.
- Cover and cook on low for 4-6 hours, until the chicken is tender and the rice is fluffy.
- Add the frozen peas about 30 minutes before serving.
- Stir in the sliced green onions just before serving.

Make ahead by prepping all ingredients the night before. Can substitute brown rice for added fiber.
