A refreshing and creamy pasta salad featuring fresh basil, juicy tomatoes, and mozzarella, perfect for summer gatherings.
Ingredients

- 8 oz short pasta (rotini, penne, or fusilli)
- 8 oz fresh mozzarella, cubed
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh basil, chopped
- 1/2 cup mayonnaise
- 1/2 cup sour cream or Greek yogurt
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Cook the pasta in a large pot of salted boiling water according to package instructions until al dente (8-10 minutes).
- Drain the pasta in a colander and let it cool for a few minutes, rinsing it under cold water.
- Prepare the dressing by mixing mayonnaise, sour cream (or yogurt), balsamic vinegar, salt, and pepper in a bowl.
- Chop the cherry tomatoes and basil, and cube the mozzarella.
- Combine the cooled pasta, tomatoes, mozzarella, and basil in the dressing.
- Taste and adjust the seasoning with salt, pepper, or more balsamic vinegar.
- Chill in the fridge for at least 30 minutes before serving.
Notes
This pasta salad tastes even better the next day, so consider making it ahead of time. Store in an airtight container for up to 3 days.
