A delightful dish combining crispy chicken with the tangy flavor of dill pickles and the richness of Parmesan.

- 4 boneless, skinless chicken breasts
- 1 cup dill pickle juice
- 1 cup seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 2 large eggs, whisked
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- Salt and pepper, to taste
- Cooking oil, for frying
Instructions
- Marinate the chicken breasts by placing them in a shallow dish or zip-top bag with dill pickle juice for 30 minutes to 2 hours.
- Set up your breading station with three shallow dishes: one for seasoned flour, one for whisked eggs, and one for breadcrumbs mixed with Parmesan.
- Remove the marinated chicken and pat dry. Dredge each piece in seasoned flour.
- Dip each floured chicken piece into the whisked eggs, then into the breadcrumb-Parmesan mixture.
- Heat oil in a large skillet and fry the chicken for 5–7 minutes on each side until golden brown and crispy.
- Transfer fried chicken to a wire rack for draining excess oil and let it rest before serving.
Notes
For a healthier version, consider air frying or baking the chicken. Additionally, marinating the chicken a day ahead can infuse even more flavor.
