Description

A delightful dish combining crispy chicken with the tangy flavor of dill pickles and the richness of Parmesan.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup dill pickle juice
  • 1 cup seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs, whisked
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • Cooking oil, for frying

Instructions

  1. Marinate the chicken breasts by placing them in a shallow dish or zip-top bag with dill pickle juice for 30 minutes to 2 hours.
  2. Set up your breading station with three shallow dishes: one for seasoned flour, one for whisked eggs, and one for breadcrumbs mixed with Parmesan.
  3. Remove the marinated chicken and pat dry. Dredge each piece in seasoned flour.
  4. Dip each floured chicken piece into the whisked eggs, then into the breadcrumb-Parmesan mixture.
  5. Heat oil in a large skillet and fry the chicken for 5–7 minutes on each side until golden brown and crispy.
  6. Transfer fried chicken to a wire rack for draining excess oil and let it rest before serving.

Notes

For a healthier version, consider air frying or baking the chicken. Additionally, marinating the chicken a day ahead can infuse even more flavor.
