Description

A heartwarming casserole that merges tender chicken, creamy rice, and caramelized onions, all topped with bubbling cheese.

Ingredients

Scale
  • 2 cups cooked rice
  • 1 lb chicken breasts
  • 2 large onions, sliced
  • 1 cup heavy cream
  • 1 cup Gruyère or Swiss cheese, shredded
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add sliced onions and sauté until deep golden brown, about 15-20 minutes.
  3. Season the chicken breasts with salt and pepper, then add to the skillet, browning each side for 4-5 minutes.
  4. Combine the cooked rice, caramelized onions, and heavy cream in a large mixing bowl.
  5. Transfer the mixture to a greased baking dish, spreading it evenly. Nestle the browned chicken on top.
  6. Sprinkle the shredded cheese over the chicken.
  7. Bake for 25-30 minutes until the chicken is cooked and the cheese is melted and bubbly.
  8. Serve warm, garnished with fresh herbs if desired.

Notes

Make ahead by assembling everything a day in advance and refrigerate until ready to bake.
