- 4 chicken thighs or breasts
- 1/2 cup pineapple juice
- 1/4 cup soy sauce
- 2 tablespoons grated fresh ginger
- 2 tablespoons brown sugar
- 1 tablespoon vegetable oil
- 1/4 teaspoon black pepper
- Green onions for garnish
Instructions
- Combine pineapple juice, soy sauce, ginger, brown sugar, vegetable oil, and black pepper in a mixing bowl and whisk until smooth.
- Place chicken in a resealable bag, pour marinade over, and refrigerate for at least 1 hour, preferably overnight.
- Preheat your grill to medium-high heat.
- Discard marinade and grill chicken for 6-8 minutes per side until fully cooked, reaching an internal temperature of 165°F.
- Garnish with chopped green onions before serving.
Notes
For best flavor, marinate overnight. You can also use an oven at 400°F for 25-30 minutes if you don’t have a grill. Customize with spices like red pepper flakes for extra heat.
