Description

A delightful fusion of bread and sweet jam that transforms brunch into a celebration of flavors.


Ingredients

Scale
  • 1.75 cups Warm Water (105-115°F)
  • 2 tsp Sugar (optional if using instant yeast)
  • 1 packet Active Dry Yeast
  • 2 cups Bread Flour
  • 2 cups All-Purpose Flour
  • 2 tsp Salt
  • 6 tbsp Olive Oil (divided)
  • 1 jar Raspberry Preserves
  • 2 cups Confectioners’ Sugar
  • 24 tbsp Whole Milk (as needed)

Instructions

  1. Combine warm water and sugar in a mixing bowl. Sprinkle yeast over the mixture and let it sit for 5-7 minutes until foamy.
  2. Mix bread flour, all-purpose flour, and salt in a separate bowl. Make a well in the center and pour in the yeast mixture and 4 tablespoons of olive oil.
  3. Knead the dough for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover it, and let it rise for about 1 hour until doubled in size.
  5. Punch down the dough and shape it into a rectangle on a parchment-lined baking sheet.
  6. Create dimples across the top with your fingers and fill them with raspberry preserves.
  7. Cover the focaccia and let it rise for another 30 minutes.
  8. Preheat the oven to 375°F (190°C) and drizzle remaining olive oil over the focaccia. Bake for 25-30 minutes until golden brown.
  9. Dust the top with confectioners’ sugar and drizzle a bit of whole milk before serving.

Notes

You can customize with different flavors of jam or add spices to the dough for extra flavor.
