Description

Delightful blueberry biscuits with a flaky texture and juicy bursts of blueberries, perfect for breakfast or a sweet snack.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 cup unsalted butter (cold and cubed)
  • 3/4 cup buttermilk
  • 1 cup fresh or frozen blueberries
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking powder, salt, and sugar until combined.
  3. Add the cold, cubed butter into the mixture and blend until it resembles coarse crumbs.
  4. Fold in the blueberries gently, avoiding crushing them.
  5. Pour in the buttermilk and optional vanilla extract, mixing gently until just combined.
  6. Turn the dough onto a floured surface and pat it into a rectangle about 1-inch thick.
  7. Cut out biscuits using a cutter or knife and place on the prepared baking sheet.
  8. Bake for 15–18 minutes until golden brown.
  9. Enjoy warm with butter, honey, or powdered sugar.

Notes

Make-ahead tips: Prepare the dough and refrigerate it overnight. Bake when ready. Use cold butter for the best texture, and avoid overmixing the dough.
