- 8 large eggs
- 1 cup mayonnaise
- 2 teaspoons Dijon mustard
- 1 teaspoon hot sauce (optional)
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper (to taste)
- 1 cup shredded sharp cheddar cheese
- 4 slices cooked bacon (crumbled)
- 2 green onions (finely chopped)
- Crackers, chips, or toasted bread slices (for serving)
Instructions
- Place the eggs in a saucepan and cover them with cold water.
- Bring the water to a gentle boil over medium heat.
- Turn off the heat and cover the saucepan. Let the eggs sit undisturbed for 10-12 minutes.
- Drain the hot water and cool the eggs under cold running water.
- Peel the cooled eggs and chop them into small pieces.
- In a medium mixing bowl, combine the mayonnaise, Dijon mustard, hot sauce, paprika, garlic powder, onion powder, salt, and black pepper. Whisk until smooth.
- Gently fold in the chopped eggs, ensuring each piece gets coated.
- Stir in the shredded cheddar cheese and half of the crumbled bacon.
- Preheat your oven to 350°F (175°C).
- Spread the mixture into a greased baking dish and bake uncovered for 15-20 minutes.
- Once out of the oven, sprinkle with the remaining bacon and chopped green onions.
- Serve warm with crackers, chips, or toasted bread.
