Description

A creamy, savory dip combining hard-boiled eggs, mayonnaise, and crispy bacon for a rich, flavorful snack perfect for gatherings.


Ingredients

  • 8 large eggs
  • 1 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1 teaspoon hot sauce (optional)
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper (to taste)
  • 1 cup shredded sharp cheddar cheese
  • 4 slices cooked bacon (crumbled)
  • 2 green onions (finely chopped)
  • Crackers, chips, or toasted bread slices (for serving)

Instructions

  1. Place the eggs in a saucepan and cover them with cold water.
  2. Bring the water to a gentle boil over medium heat.
  3. Turn off the heat and cover the saucepan. Let the eggs sit undisturbed for 10-12 minutes.
  4. Drain the hot water and cool the eggs under cold running water.
  5. Peel the cooled eggs and chop them into small pieces.
  6. In a medium mixing bowl, combine the mayonnaise, Dijon mustard, hot sauce, paprika, garlic powder, onion powder, salt, and black pepper. Whisk until smooth.
  7. Gently fold in the chopped eggs, ensuring each piece gets coated.
  8. Stir in the shredded cheddar cheese and half of the crumbled bacon.
  9. Preheat your oven to 350°F (175°C).
  10. Spread the mixture into a greased baking dish and bake uncovered for 15-20 minutes.
  11. Once out of the oven, sprinkle with the remaining bacon and chopped green onions.
  12. Serve warm with crackers, chips, or toasted bread.

Notes

Make-ahead options available. Can be baked in an air fryer for quicker cooking.
