Description

A comforting casserole made with tender chicken, fluffy rice, and a crunchy Ritz cracker topping, perfect for family gatherings or weeknight dinners.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup uncooked white rice
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • 1 sleeve Ritz crackers, crushed
  • 1/4 cup melted butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, uncooked rice, cream of chicken soup, chicken broth, sour cream, garlic powder, onion powder, salt, and pepper in a large mixing bowl.
  3. Pour the chicken and rice mixture into a greased baking dish and spread evenly.
  4. Combine the crushed Ritz crackers with melted butter in a separate bowl and mix thoroughly.
  5. Sprinkle the buttery cracker mixture over the chicken and rice.
  6. Bake in the preheated oven for 30-35 minutes, or until the rice is tender and the topping is golden brown.
  7. Allow the casserole to cool for 5 minutes before serving.

Notes

You can assemble the casserole a day in advance; just add 5-10 minutes to the baking time. Consider using an air fryer for a quicker option.
