- 1 large onion, thinly sliced
- 2 tablespoons butter
- 1 teaspoon garlic powder
- 1 teaspoon thyme
- Salt and pepper to taste
- 1 cup beef broth
- 1 cup Swiss cheese, shredded
- 1 cup breadcrumbs
Instructions
- Preheat your oven to 350°F (175°C).
- Melt butter in a heavy skillet over medium heat, then add the onions.
- Caramelize the onions slowly for about 15–20 minutes until golden brown.
- Season the caramelized onions with garlic powder, thyme, salt, and pepper.
- Mix in the breadcrumbs and shredded cheese until well combined.
- Butterfly the pork loin by slicing it along its length without cutting all the way through.
- Stuff the pork loin with the onion mixture and tie it with kitchen twine.
- Place the stuffed pork in a roasting pan and pour beef broth over it.
- Roast for approximately 1 hour or until the internal temperature reaches 145°F (63°C).
- Let the pork rest for 10 minutes before slicing.
