- 2 pounds pork shoulder
- 1/2 cup jalapeños, chopped (seeds removed)
- 1/2 cup brown sugar
- 1/2 cup soy sauce
- 1/4 cup apple cider vinegar
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 1 tablespoon vegetable oil
- Chopped green onions for garnish
Instructions
- Combine chopped jalapeños, brown sugar, soy sauce, apple cider vinegar, minced garlic, ground cumin, salt, and pepper in a large bowl. Stir until the sugar dissolves.
- Cut the pork shoulder into chunks and place them into the marinade. Allow it to marinate in the refrigerator for at least 30 minutes.
- Heat the vegetable oil in a large skillet over medium-high heat.
- Remove the pork from the marinade and sear it in the skillet until browned on all sides, about 6–8 minutes.
- Add the remaining marinade to the skillet and reduce the heat to low.
- Cover the skillet and let it simmer for about 90 to 120 minutes, or until the pork is tender.
- Serve the pork garnished with chopped green onions.
Notes
Marinate the pork overnight for deeper flavor. Leftovers can be transformed into tacos, burritos, or casseroles.
