- 1.5 pounds boneless, skinless chicken thighs
- 1 lime (juiced)
- 3/4 teaspoon table salt
- 3/4 teaspoon ground black pepper
- 1 (7-ounce) container plain Greek yogurt
- 5 cloves garlic (minced)
- 1 tablespoon minced fresh ginger
- 1 tablespoon ground cumin
- 1 tablespoon smoked paprika
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cayenne
Instructions
- Begin by rubbing the chicken with salt, pepper, and lime juice.
- Whisk together Greek yogurt, minced garlic, ginger, cumin, paprika, turmeric, and cayenne in a large mixing bowl.
- Add the chicken to the bowl, ensuring each piece is evenly coated.
- Cover the bowl with plastic wrap and refrigerate for at least 6 hours, preferably 24 hours.
- Preheat your broiler or oven to high (450°F).
- Line a baking sheet with foil or parchment paper.
- Arrange the marinated chicken on the sheet apart for even cooking.
- Place the chicken under the broiler for about 15-20 minutes.
- Flip each piece and return to the broiler for an additional 10 minutes.
Notes
Marinate the chicken overnight for the best flavor. You can also freeze marinated chicken for up to three months.
