Description
A refreshing and vibrant Arugula Couscous Salad with crumbled feta, cherry tomatoes, and a zesty lemon dressing—a perfect addition to any meal.
Ingredients
Scale
- 1 cup couscous
- 1 1/2 cups water or vegetable broth
- 2 cups fresh arugula
- 1 cup feta cheese, crumbled
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Prepare the couscous: Begin by bringing water or vegetable broth to a rolling boil in a medium saucepan. Once boiling, add the couscous, remove from heat, cover, and let it sit for about 5 minutes. Fluff with a fork and let it cool down completely.
- Assemble the salad ingredients: In a large mixing bowl, combine the fresh arugula, crumbled feta cheese, halved cherry tomatoes, and finely chopped red onion.
- Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until completely blended.
- Combine everything: When the couscous has cooled, add it to the salad mixture and gently pour the dressing over the top. Toss everything together with care.
- Serve: For the best flavors, serve immediately or refrigerate to let the flavors meld together.
Notes
This salad can be made ahead of time but is best served fresh to maintain the crispness of the arugula.
