Ingredients

  • 2 slices of bread (whole grain, sourdough, or gluten-free)
  • 1 cooked chicken breast, sliced
  • 2 slices of cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Butter for toasting

Instructions

  1. Toast the bread: Begin by melting a pat of butter in your non-stick skillet over medium heat. Once hot, place the bread slices in the pan and toast until golden brown and crisp, about 2-3 minutes per side.
  2. Mash the avocado: While the bread toasts, scoop the ripe avocado into a bowl. Use a fork to mash it and season with salt and pepper.
  3. Spread the avocado: Evenly spread the creamy avocado on one slice of toasted bread.
  4. Layer the chicken: Place the sliced chicken breast evenly over the avocado.
  5. Add the cheese: Lay the slices of cheese over the chicken.
  6. Top and cook: Close the sandwich with the second slice of bread, then return it to the skillet, cooking until the cheese melts and the bread is golden brown, about 3-4 minutes.

Notes
