Instructions
- Toast the bread: Begin by melting a pat of butter in your non-stick skillet over medium heat. Once hot, place the bread slices in the pan and toast until golden brown and crisp, about 2-3 minutes per side.
- Mash the avocado: While the bread toasts, scoop the ripe avocado into a bowl. Use a fork to mash it and season with salt and pepper.
- Spread the avocado: Evenly spread the creamy avocado on one slice of toasted bread.
- Layer the chicken: Place the sliced chicken breast evenly over the avocado.
- Add the cheese: Lay the slices of cheese over the chicken.
- Top and cook: Close the sandwich with the second slice of bread, then return it to the skillet, cooking until the cheese melts and the bread is golden brown, about 3-4 minutes.
- Serve and enjoy: Slice the sandwich in half and serve warm.
Notes
For make-ahead preparation, you can slice the chicken and mash the avocado in advance. To prevent browning, add lemon juice to the avocado.
