Description
A delicious pasta salad featuring tender pasta, crispy bacon, and sharp cheddar, all tossed in a creamy ranch dressing.
Ingredients
Scale
- 8 ounces rotini pasta (or elbow macaroni, or shells)
- 1 cup sour cream
- ½ cup liquid ranch dressing
- 1 cup cheddar cheese, grated
- 6 slices bacon, cooked until crispy
- ¼ cup green onions, chopped
Instructions
- Cook the pasta: Fill a large pot with water, add salt, and bring to a boil. Cook rotini pasta until al dente, about 8-10 minutes.
- Drain and cool: Drain the pasta in a colander and rinse under cold water to stop the cooking.
- Prepare the dressing: In a mixing bowl, combine sour cream and ranch dressing, whisking until smooth.
- Mix the salad: In a large bowl, add the cooled pasta, bacon, cheddar cheese, and green onions. Drizzle the dressing over the mixture.
- Toss and chill: Fold the mixture until combined, cover, and refrigerate for at least one hour.
Notes
Make-ahead the salad a day before for enhanced flavors. Avoid using pre-grated cheese for the best taste.
