Description

A delicious pasta salad featuring tender pasta, crispy bacon, and sharp cheddar, all tossed in a creamy ranch dressing.

Ingredients

Scale
  • 8 ounces rotini pasta (or elbow macaroni, or shells)
  • 1 cup sour cream
  • ½ cup liquid ranch dressing
  • 1 cup cheddar cheese, grated
  • 6 slices bacon, cooked until crispy
  • ¼ cup green onions, chopped

Instructions

  1. Cook the pasta: Fill a large pot with water, add salt, and bring to a boil. Cook rotini pasta until al dente, about 8-10 minutes.
  2. Drain and cool: Drain the pasta in a colander and rinse under cold water to stop the cooking.
  3. Prepare the dressing: In a mixing bowl, combine sour cream and ranch dressing, whisking until smooth.
  4. Mix the salad: In a large bowl, add the cooled pasta, bacon, cheddar cheese, and green onions. Drizzle the dressing over the mixture.
  5. Toss and chill: Fold the mixture until combined, cover, and refrigerate for at least one hour.

Notes

Make-ahead the salad a day before for enhanced flavors. Avoid using pre-grated cheese for the best taste.
