Description

A delightful blend of ripe bananas and zucchini creates a moist and flavorful quick bread that’s perfect for breakfast or a snack.


Ingredients

  • 2 medium zucchinis (grated)
  • 2 ripe bananas (mashed)
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan generously.
  2. Whisk together the sugar, oil, eggs, and vanilla extract until well combined.
  3. Stir in the mashed bananas and grated zucchini.
  4. Mix the flour, baking soda, baking powder, salt, and cinnamon together in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, folding gently.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick comes out clean.
  8. Allow to cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

For added flavor, consider adding 1/2 cup of chopped nuts or chocolate chips.
