Description

Tender chicken braised with sweet cherry tomatoes and briny olives, creating a deliciously vibrant dish.


Ingredients

  • 4 Chicken Thighs or Breasts
  • 1 Cup Cherry Tomatoes, Halved
  • 1/2 Cup Olives, Pitted and Sliced
  • 2 Shallots, Sliced
  • 3 Cloves Garlic, Minced
  • 1 Cup White Wine
  • Salt and Pepper to Taste
  • 2 Tablespoons Olive Oil
  • Fresh Herbs (e.g., thyme or parsley) for Garnish

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then place it in the skillet. Sear each piece until beautifully golden brown, about 6-7 minutes per side.
  2. Remove the chicken and set it aside on a plate. In the same skillet, add sliced shallots and minced garlic, sautéing until they soften, about 2-3 minutes.
  3. Toss in the halved cherry tomatoes and sliced olives, followed by the white wine. Use your wooden spoon to scrape up any browned bits from the bottom of the pan.
  4. Return the chicken to the skillet, nestling it among the tomatoes and olives. Cover with a lid and reduce the heat to low. Allow it to simmer gently for about 30 minutes.
  5. Serve hot, garnished with fresh herbs.

Notes

This dish can be made ahead of time and stored in the refrigerator for up to 3 days. It also freezes well for about 2 months.
