- 4 Chicken Thighs or Breasts
- 1 Cup Cherry Tomatoes, Halved
- 1/2 Cup Olives, Pitted and Sliced
- 2 Shallots, Sliced
- 3 Cloves Garlic, Minced
- 1 Cup White Wine
- Salt and Pepper to Taste
- 2 Tablespoons Olive Oil
- Fresh Herbs (e.g., thyme or parsley) for Garnish
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Season the chicken with salt and pepper, then place it in the skillet. Sear each piece until beautifully golden brown, about 6-7 minutes per side.
- Remove the chicken and set it aside on a plate. In the same skillet, add sliced shallots and minced garlic, sautéing until they soften, about 2-3 minutes.
- Toss in the halved cherry tomatoes and sliced olives, followed by the white wine. Use your wooden spoon to scrape up any browned bits from the bottom of the pan.
- Return the chicken to the skillet, nestling it among the tomatoes and olives. Cover with a lid and reduce the heat to low. Allow it to simmer gently for about 30 minutes.
- Serve hot, garnished with fresh herbs.
Notes
This dish can be made ahead of time and stored in the refrigerator for up to 3 days. It also freezes well for about 2 months.
