Description

A comforting and creamy Cheesy Corn Dip that combines sweet corn, spicy jalapeños, and rich cheeses for a delightful appetizer perfect for any gathering.


Ingredients

  • 1 can corn, drained
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup diced green onions
  • 1/4 cup diced jalapeños (optional)
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions

  1. Start by greasing your crockpot lightly to help with later cleanup.
  2. Combine your drained corn, softened cream cheese, shredded cheddar cheese, sour cream, diced green onions, and jalapeños in the crockpot.
  3. Stir everything together until it’s well-mixed.
  4. Set your crockpot to low and let it cook for about 120-180 minutes.
  5. Stir occasionally and season with salt and pepper to your liking. Serve warm with tortilla chips ready for dipping.

Notes

For a spicier dip, increase the amount of jalapeños or add cayenne pepper. Make-ahead by preparing the mixture the night before.
