Description

Delicious Cheesy Rotel Beef Soft Tortilla Tacos filled with savory beef, creamy cheese, and zesty Rotel tomatoes, perfect for quick meals or festive gatherings.


Ingredients

  • 1 can (10 oz) Rotel tomatoes and chilies
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 8 soft tortillas
  • Taco seasoning (optional)
  • Salt and pepper to taste

Instructions

  1. Brown the beef: Heat a skillet over medium heat. Add the ground beef and cook, breaking it apart until browned, about 7–10 minutes. Drain excess fat.
  2. Add Rotel and seasoning: Stir in the Rotel tomatoes and chilies, along with taco seasoning if desired. Simmer for about 3–4 minutes.
  3. Melt the cheese: Sprinkle shredded cheese into the skillet, folding it into the beef mixture until melted.
