Description

A hearty and comforting dish featuring savory ground beef, tender rice, and melted cheese, perfect for family dinners or game nights.

Ingredients

Scale
  • 1 lb ground beef
  • 1 cup uncooked rice
  • 2 cups beef broth
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 can black beans (optional)
  • 1 cup corn (optional)
  • 1 cup diced tomatoes
  • 1 onion, diced
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium heat. Add the ground beef and diced onion, cooking until the beef is browned and crumbled, about 5–7 minutes.
  2. Drain any excess fat.
  3. Sprinkle in the taco seasoning and add the diced tomatoes and beef broth. Stir well and let it simmer.
  4. Add the uncooked rice, stirring to combine.
  5. Cover the skillet with a lid and cook for about 15–20 minutes until the rice is tender and liquid is absorbed.
  6. If using, stir in black beans and corn.
  7. Remove from heat and sprinkle shredded cheese on top. Cover again to melt the cheese.
  8. Serve warm with your choice of fresh toppings.

Notes

Customize with your favorite toppings like sour cream and guacamole. Make-ahead tips: Prepare filling in advance and reheat before serving.
