- 1 lb ground beef
- 1 cup uncooked rice
- 2 cups beef broth
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 can black beans (optional)
- 1 cup corn (optional)
- 1 cup diced tomatoes
- 1 onion, diced
- Salt and pepper to taste
Instructions
- Heat a large skillet over medium heat. Add the ground beef and diced onion, cooking until the beef is browned and crumbled, about 5–7 minutes.
- Drain any excess fat.
- Sprinkle in the taco seasoning and add the diced tomatoes and beef broth. Stir well and let it simmer.
- Add the uncooked rice, stirring to combine.
- Cover the skillet with a lid and cook for about 15–20 minutes until the rice is tender and liquid is absorbed.
- If using, stir in black beans and corn.
- Remove from heat and sprinkle shredded cheese on top. Cover again to melt the cheese.
- Serve warm with your choice of fresh toppings.
