Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together the dry ingredients: flour, baking soda, salt, and cinnamon.
- Cream butter and sugars together until light and fluffy, about 3-4 minutes.
- Add in the egg and vanilla, mixing until well combined.
- Stir in the apple cider.
- Combine wet and dry ingredients, mixing just until combined.
- Shape the dough into tablespoon-sized balls and place them on the baking sheet, spaced about 2 inches apart.
- Bake for 10-12 minutes until the edges are light golden and the center remains soft.
- Cool for a few minutes on the baking sheet before transferring to a wire rack.
- Dust with powdered sugar, if desired.
Notes
For thicker cookies, chill the dough for an hour before baking. These cookies freeze beautifully; shape the dough into balls and freeze for up to a month.
