- 2 cups cooked chicken, shredded
- 1 cup diced tomatoes
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- 1/4 cup balsamic vinegar
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the diced tomatoes, chopped basil, minced garlic, balsamic vinegar, salt, pepper, and oregano in a mixing bowl.
- Lay down a layer of shredded chicken in your baking dish.
- Pour the tomato mixture over the chicken, spreading it evenly.
- Sprinkle shredded mozzarella cheese generously over the top.
- Drizzle olive oil over the dish.
- Bake for 25-30 minutes until the cheese is bubbly and golden.
- Serve warm, garnished with extra basil if desired.
Notes
For make-ahead tips, prepare the casserole a day in advance and refrigerate before baking. Can also be cooked in an air fryer at 375°F for about 20 minutes.
