Description

A delightful casserole combining shredded chicken with fresh tomatoes, basil, and mozzarella cheese for a comforting dish that warms the heart.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup diced tomatoes
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup balsamic vinegar
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the diced tomatoes, chopped basil, minced garlic, balsamic vinegar, salt, pepper, and oregano in a mixing bowl.
  3. Lay down a layer of shredded chicken in your baking dish.
  4. Pour the tomato mixture over the chicken, spreading it evenly.
  5. Sprinkle shredded mozzarella cheese generously over the top.
  6. Drizzle olive oil over the dish.
  7. Bake for 25-30 minutes until the cheese is bubbly and golden.
  8. Serve warm, garnished with extra basil if desired.

Notes

For make-ahead tips, prepare the casserole a day in advance and refrigerate before baking. Can also be cooked in an air fryer at 375°F for about 20 minutes.
