Description

A vibrant and flavorful salsa combining sweet pineapple with smoky chipotle peppers, perfect for tacos, grilled meats, and as a dip.

Ingredients

Scale
  • 1 cup pineapple, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup red bell pepper, diced
  • 1/4 cup cilantro, chopped
  • 12 chipotle peppers in adobo sauce, minced
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. Start by preparing your ingredients. Dice the pineapple into bite-sized cubes, chop the red onion and red bell pepper, and finely mince the chipotle peppers.
  2. In a mixing bowl, combine the diced pineapple, chopped red onion, diced red bell pepper, and cilantro.
  3. In a separate small bowl, mix together the minced chipotle peppers and lime juice.
  4. Pour the chipotle-lime mixture over the pineapple blend and gently stir until well combined.
  5. Season your salsa with salt to taste, starting with a pinch and adjusting as needed.
  6. Let the salsa sit for about 30 minutes at room temperature to allow the flavors to meld.
  7. Serve this vibrant salsa with tacos, grilled chicken, seafood, or tortilla chips.

Notes

Allowing the salsa to rest enhances the flavors. It’s even better when made a day in advance.
