Description

A rich and moist zucchini bread filled with gooey chocolate chips and subtle hints of cinnamon, perfect for breakfast or a sweet snack.


Ingredients

  • 2 cups grated zucchini
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Mix together the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract in a large bowl.
  3. Whisk together the flour, baking soda, baking powder, salt, and cinnamon in another bowl.
  4. Add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Fold in the chocolate chips evenly.
  6. Pour the batter into the prepared loaf pan and spread it out.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

Make sure to drain excess moisture from the zucchini and avoid overmixing to keep the bread tender.
