Ingredients

- 4 cups stock or broth (chicken, vegetable, or beef)
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped onions
- 1 cup diced proteins (chicken, lentils, or beans)
- Fresh herbs (thyme, basil)
- Salt and pepper to taste
- 1 splash of oil for sautéing
- Optional: Cream or dairy for creaminess
Instructions
- Sauté aromatics: In your stock pot, heat a splash of oil over medium heat. Add chopped onions, garlic, carrots, and celery. Sauté until softened, about 5-7 minutes.
- Add the vegetables & stocks: Toss in your choice of additional vegetables and stir in the stock or broth, scraping the bottom for flavor.
- Add proteins & simmer: Add proteins and bring soup to a gentle boil. Reduce heat to simmer for 20-30 minutes.
- Blend for creaminess: Use an immersion blender or regular blender to puree until smooth.
- Finish with herbs & seasoning: Stir in herbs, adjust seasoning, and add a squeeze of lemon juice if desired.
- Serve warm: Ladle soup into bowls and enjoy!
Notes
