Description

A heartwarming recipe for classic homemade soup, rich in flavors and perfect for any occasion.


Ingredients

Scale
  • 4 cups stock or broth (chicken, vegetable, or beef)
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onions
  • 1 cup diced proteins (chicken, lentils, or beans)
  • Fresh herbs (thyme, basil)
  • Salt and pepper to taste
  • 1 splash of oil for sautéing
  • Optional: Cream or dairy for creaminess

Instructions

  1. Sauté aromatics: In your stock pot, heat a splash of oil over medium heat. Add chopped onions, garlic, carrots, and celery. Sauté until softened, about 5-7 minutes.
  2. Add the vegetables & stocks: Toss in your choice of additional vegetables and stir in the stock or broth, scraping the bottom for flavor.
  3. Add proteins & simmer: Add proteins and bring soup to a gentle boil. Reduce heat to simmer for 20-30 minutes.
  4. Blend for creaminess: Use an immersion blender or regular blender to puree until smooth.
  5. Finish with herbs & seasoning: Stir in herbs, adjust seasoning, and add a squeeze of lemon juice if desired.
  6. Serve warm: Ladle soup into bowls and enjoy!

Notes

Soups can be frozen for up to three months. Consider using seasonal vegetables for variation.
