Description

Delightful medley of oats, nuts, and chocolate chips in a chewy yet crunchy cookie.


Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup chopped nuts (such as walnuts or pecans)
  • 1/2 cup shredded coconut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Add the egg and vanilla extract, and mix until combined.
  4. Combine the rolled oats, flour, baking soda, and salt in another bowl; gradually fold into the creamed mixture.
  5. Stir in the chocolate chips, chopped nuts, and shredded coconut.
  6. Scoop spoonfuls of dough onto a lined baking sheet, spacing them 2 inches apart.
  7. Bake for 10-12 minutes until edges are golden brown.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For best results, chill the dough for at least 30 minutes before baking.
