- 2 Medium Sweet Potatoes
- 1 lb Ground Turkey
- 1 cup Cottage Cheese
- 1 tbsp Taco Seasoning
- 1 cup Shredded Cheese (cheddar or mozzarella)
- 2 tbsp Olive Oil
- Salt to taste
- Pepper to taste
- Optional: Sour Cream
- Optional: Chopped Green Onions
Instructions
- Preheat your oven to 400°F (200°C).
- Wash your sweet potatoes, pierce them multiple times with a fork, and rub with olive oil, salt, and pepper.
- Place the sweet potatoes on a baking sheet and roast for 45-60 minutes.
- Heat a skillet over medium heat, add ground turkey and taco seasoning, and cook until browned (about 5-7 minutes).
- Remove sweet potatoes from oven, allow to cool slightly, then cut in half lengthwise and scoop out some flesh.
- Blend the sweet potato flesh with cottage cheese and cooked turkey.
- Fill each sweet potato boat with the mixture and top with shredded cheese.
- Return to oven for another 10 minutes until cheese is bubbly.
- Serve warm, optionally topped with sour cream and green onions.
Notes
Make-ahead tips include preparing the filling in advance and storing it in the refrigerator. Customize with different proteins or spices as desired.
