  • 1 cup mushrooms, sliced

  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Once shimmering, add the diced chicken. Cook for about 5-7 minutes until browned on all sides, stirring frequently to ensure even cooking.
  2. Add the chopped onion, garlic, carrots, celery, and mushrooms to the pot. Sauté for roughly 5 minutes until the vegetables soften and the aroma fills your kitchen.
  3. Pour in the white wine, letting it cook for about 2 minutes. This step will reduce the wine slightly, concentrating its flavor and allowing the alcohol to evaporate.
  4. Stir in the chicken broth and thyme, and bring the mixture to a gentle simmer. Allow it to cook for 15 minutes, letting all the flavors meld together beautifully.
  5. Reduce the heat to low and gently mix in the heavy cream. Here, season with salt and pepper to your liking, enhancing the flavors even further.
  6. Cook for an additional 5 minutes, allowing the cream to thicken slightly, making your stew luxurious and creamy.
  7. Serve hot, garnished with fresh parsley. Don’t forget to have a warm loaf of bread nearby to soak up every delicious drop.
