Description

A comforting casserole filled with tender vegetables and a creamy cheese sauce, perfect for cozy winter evenings.


Ingredients

  • 2 cups cauliflower florets
  • 2 cups broccoli florets
  • 2 cups sliced carrots
  • 2 tablespoons olive oil
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 2 cups shredded cheese (cheddar or your choice)
  • 1/2 cup milk
  • 1 tablespoon flour
  • Salt and pepper to taste
  • Breadcrumbs for topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Steam the cauliflower, broccoli, and carrots until tender.
  3. Heat olive oil in a skillet and sauté the onion and garlic until translucent.
  4. Stir in the flour and gradually add the milk, whisking to avoid lumps.
  5. Remove from heat and stir in the shredded cheese until melted.
  6. Combine the steamed vegetables with the cheese sauce; add salt and pepper to taste.
  7. Pour the mixture into a baking dish, top with breadcrumbs if desired, and bake for 25-30 minutes.
  8. Let it cool slightly before serving.

Notes

For a make-ahead option, prepare and assemble the casserole the day before and refrigerate. Bake straight from the fridge, adding an additional 10 minutes to the baking time.
