- 2 cups broccoli florets
- 2 cups sliced carrots
- 2 tablespoons olive oil
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 2 cups shredded cheese (cheddar or your choice)
- 1/2 cup milk
- 1 tablespoon flour
- Salt and pepper to taste
- Breadcrumbs for topping (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Steam the cauliflower, broccoli, and carrots until tender.
- Heat olive oil in a skillet and sauté the onion and garlic until translucent.
- Stir in the flour and gradually add the milk, whisking to avoid lumps.
- Remove from heat and stir in the shredded cheese until melted.
- Combine the steamed vegetables with the cheese sauce; add salt and pepper to taste.
- Pour the mixture into a baking dish, top with breadcrumbs if desired, and bake for 25-30 minutes.
- Let it cool slightly before serving.
Notes
For a make-ahead option, prepare and assemble the casserole the day before and refrigerate. Bake straight from the fridge, adding an additional 10 minutes to the baking time.
