Description

A deliciously crispy chicken dish infused with the tang of dill pickles and the richness of Parmesan, perfect for gatherings and family dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup dill pickle juice
  • 1 cup seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs, whisked
  • Spices: garlic powder, onion powder, paprika
  • Salt and pepper, to taste
  • Cooking oil, for frying

Instructions

  1. Marinate the chicken: Place chicken breasts in a shallow dish or zip-top bag. Pour dill pickle juice over and let marinate in the refrigerator for at least 30 minutes.
  2. Prepare your breading stations: Set up three dishes for flour, eggs, and breadcrumbs mixed with Parmesan.
  3. Dredge the chicken: Remove from brine, pat dry, coat in flour, dip in eggs, then press into the breadcrumb mixture.
  4. Heat the oil: In a large skillet, heat about 1/2 inch of oil over medium-high heat until hot.
  5. Fry the chicken: Cook for 5–7 minutes on each side until golden brown and cooked through, reaching an internal temperature of 165°F.
  6. Drain excess oil: Transfer to a wire rack to rest before serving hot.
