- 1 cup dill pickle juice
- 1 cup seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 2 large eggs, whisked
- Spices: garlic powder, onion powder, paprika
- Salt and pepper, to taste
- Cooking oil, for frying
Instructions
- Marinate the chicken: Place chicken breasts in a shallow dish or zip-top bag. Pour dill pickle juice over and let marinate in the refrigerator for at least 30 minutes.
- Prepare your breading stations: Set up three dishes for flour, eggs, and breadcrumbs mixed with Parmesan.
- Dredge the chicken: Remove from brine, pat dry, coat in flour, dip in eggs, then press into the breadcrumb mixture.
- Heat the oil: In a large skillet, heat about 1/2 inch of oil over medium-high heat until hot.
- Fry the chicken: Cook for 5–7 minutes on each side until golden brown and cooked through, reaching an internal temperature of 165°F.
- Drain excess oil: Transfer to a wire rack to rest before serving hot.
Notes
For best flavor, marinate the chicken overnight. For a healthier option, try air frying.
