Description

A heartwarming Crock Pot Chicken Noodle Soup filled with tender chicken, colorful vegetables, and soft egg noodles, perfect for cozy evenings.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 8 cups chicken broth
  • 3 cups egg noodles
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Begin by placing the chicken breasts at the bottom of the crock pot.
  2. Pour in the chicken broth, letting it envelop the chicken fully.
  3. Follow this with the sliced carrots, celery, chopped onion, minced garlic, dried thyme, and a sprinkle of salt and pepper.
  4. Secure the lid and let your crock pot work its wonders.
  5. Cook on low for 6-8 hours or high for 3-4 hours.
  6. Stir in the egg noodles about 30 minutes before serving.
  7. Once the chicken is cooked to tender perfection, use two forks to shred it in the pot.
  8. Serve hot, garnished with freshly chopped parsley.

Notes

Make-ahead tips include chopping vegetables a day ahead and storing them in the fridge. You can also assemble everything except the egg noodles the night before.
