Description

A comforting and easy-to-make taco casserole featuring seasoned beef, pasta or rice, and melty cheese, perfect for weeknight dinners.


Ingredients

  • 1 lb ground beef
  • 1 cup taco seasoning
  • 2 cups cooked pasta or rice
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 can black beans (drained and rinsed)
  • 1 can corn (drained)
  • 1 can diced tomatoes
  • 1 cup salsa
  • 1/2 cup chopped onions
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef over medium heat, crumbling it as it cooks until fully browned.
  2. Drain any excess fat and transfer the cooked beef into the crockpot.
  3. Add the taco seasoning, cooked pasta or rice, shredded cheese, black beans, corn, diced tomatoes, salsa, and chopped onions to the pot.
  4. Stir well until everything is thoroughly combined.
  5. Season with salt and pepper to taste.
  6. Cover the crockpot and cook on low for 4-6 hours.
  7. Serve warm, and top with additional cheese or favorite toppings.

This casserole can be customized to fit dietary preferences and can be prepared the night before.
