- 1 lb ground beef
- 1 cup taco seasoning
- 2 cups cooked pasta or rice
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 can black beans (drained and rinsed)
- 1 can corn (drained)
- 1 can diced tomatoes
- 1 cup salsa
- 1/2 cup chopped onions
- Salt and pepper to taste
Instructions
- Brown the ground beef over medium heat, crumbling it as it cooks until fully browned.
- Drain any excess fat and transfer the cooked beef into the crockpot.
- Add the taco seasoning, cooked pasta or rice, shredded cheese, black beans, corn, diced tomatoes, salsa, and chopped onions to the pot.
- Stir well until everything is thoroughly combined.
- Season with salt and pepper to taste.
- Cover the crockpot and cook on low for 4-6 hours.
- Serve warm, and top with additional cheese or favorite toppings.
