Description

An easy, wholesome meal that combines tender chicken with zesty taco seasoning and creamy cheese, all cooked in a slow cooker.


Ingredients

  • 2 cups shredded chicken
  • 1 packet taco seasoning
  • 1 cup creamy cheese (such as cream cheese or shredded cheese)
  • 1 cup rice (white or brown)
  • 2 cups chicken broth
  • 1 can black beans (optional)
  • 1 can corn (optional)
  • 1 diced bell pepper (optional)

Instructions

  1. Combine the shredded chicken, taco seasoning, rice, and chicken broth in a Crockpot. If using, add black beans, corn, and diced bell pepper.
  2. Stir everything until well mixed, ensuring even distribution of rice and seasoning.
  3. Cover the Crockpot and cook on low for 6-8 hours, or on high for 3-4 hours.
  4. Add the creamy cheese about 30 minutes before serving, stirring gently to allow it to melt through the mixture.
  5. Serve warm and enjoy this comforting meal.

Notes

For best results, prep ingredients the night before. This dish can also be made in an Instant Pot or stovetop.
