- 2 cups shredded chicken
- 1 packet taco seasoning
- 1 cup creamy cheese (such as cream cheese or shredded cheese)
- 1 cup rice (white or brown)
- 2 cups chicken broth
- 1 can black beans (optional)
- 1 can corn (optional)
- 1 diced bell pepper (optional)
Instructions
- Combine the shredded chicken, taco seasoning, rice, and chicken broth in a Crockpot. If using, add black beans, corn, and diced bell pepper.
- Stir everything until well mixed, ensuring even distribution of rice and seasoning.
- Cover the Crockpot and cook on low for 6-8 hours, or on high for 3-4 hours.
- Add the creamy cheese about 30 minutes before serving, stirring gently to allow it to melt through the mixture.
- Serve warm and enjoy this comforting meal.

For best results, prep ingredients the night before. This dish can also be made in an Instant Pot or stovetop.
