- 2 stalks of celery, chopped
- 1 green apple, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped

Instructions
- Wash all your fresh produce thoroughly.
- Combine the diced cucumbers, chopped celery, diced green apple, and sliced red onion in a large bowl.
- Whisk together the lemon juice, olive oil, salt, and pepper until emulsified in a separate small bowl.
- Pour the dressing over the salad ingredients and gently toss to coat.
- Add the chopped parsley and give the salad another gentle mix. Serve immediately or chill for 30 minutes.
