Description

A heartwarming burrito filled with seasoned black beans and melting cheese, wrapped in a golden, crispy tortilla.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or your choice)
  • 4 large flour tortillas
  • 1 cup cooked rice (optional)
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking
  • Sour cream and salsa for serving (optional)

Instructions

  1. Mash the black beans in a bowl using a fork or potato masher. Mix in the cumin, salt, and pepper.
  2. Take a flour tortilla and spread a generous spoonful of the bean mixture in the center.
  3. Roll the tortilla tightly, folding in the sides to keep all the filling enclosed.
  4. Heat a splash of olive oil in a skillet over medium heat.
  5. Place your burritos seam-side down in the skillet and let them sizzle until golden brown, about 2-3 minutes per side.
  6. Serve hot with dollops of sour cream or a drizzle of salsa if desired.

Notes

Make-ahead: Prepare the bean mixture in advance and refrigerate for up to 2 days. Use an air fryer for a healthier version.
