- 1 can black beans, drained and rinsed
- 1 cup shredded cheese (cheddar or your choice)
- 4 large flour tortillas
- 1 cup cooked rice (optional)
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Olive oil for cooking
- Sour cream and salsa for serving (optional)
Instructions
- Mash the black beans in a bowl using a fork or potato masher. Mix in the cumin, salt, and pepper.
- Take a flour tortilla and spread a generous spoonful of the bean mixture in the center.
- Roll the tortilla tightly, folding in the sides to keep all the filling enclosed.
- Heat a splash of olive oil in a skillet over medium heat.
- Place your burritos seam-side down in the skillet and let them sizzle until golden brown, about 2-3 minutes per side.
- Serve hot with dollops of sour cream or a drizzle of salsa if desired.
Notes
Make-ahead: Prepare the bean mixture in advance and refrigerate for up to 2 days. Use an air fryer for a healthier version.
