Description

Ingredients

  • 2 pounds waxy potatoes (Yukon Gold or red)
  • 4 slices bacon
  • 1 medium onion, sliced
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 2 tablespoons sugar
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Start boiling the potatoes: Place the potatoes in a large pot and cover them with cold water. Add salt and boil until tender—about 15-20 minutes. Drain and cool before chopping.
  2. Make the bacon crispy: In a skillet over medium heat, cook the bacon until crispy. Remove and cool on a paper towel, reserving the fat.
  3. Sauté the onions: In the same skillet, sauté sliced onions in the reserved bacon fat until caramelized.
  4. Whisk up the dressing: In a bowl, combine apple cider vinegar, water, sugar, mustard, salt, and pepper. Whisk until sugar dissolves.
  5. Combine all ingredients: In a large bowl, toss chopped potatoes, crumbled bacon, and caramelized onions. Pour dressing over and fold gently.
