Description
A delightful blend of tender potatoes, crispy bacon, and a tangy dressing, this Easy German Potato Salad captures the essence of summer gatherings and comfort food.
Ingredients
Scale
- 2 pounds waxy potatoes (Yukon Gold or red)
- 4 slices bacon
- 1 medium onion, sliced
- 1/4 cup apple cider vinegar
- 1/4 cup water
- 2 tablespoons sugar
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Start boiling the potatoes: Place the potatoes in a large pot and cover them with cold water. Add salt and boil until tender—about 15-20 minutes. Drain and cool before chopping.
- Make the bacon crispy: In a skillet over medium heat, cook the bacon until crispy. Remove and cool on a paper towel, reserving the fat.
- Sauté the onions: In the same skillet, sauté sliced onions in the reserved bacon fat until caramelized.
- Whisk up the dressing: In a bowl, combine apple cider vinegar, water, sugar, mustard, salt, and pepper. Whisk until sugar dissolves.
- Combine all ingredients: In a large bowl, toss chopped potatoes, crumbled bacon, and caramelized onions. Pour dressing over and fold gently.
- Serve it up: Enjoy warm or chilled. Garnish with fresh parsley before serving.
Notes
This salad can be made a day in advance, and the flavors improve as they meld together in the fridge. Consider adding hard-boiled eggs or pickles for variations.
