- 1 pound shrimp, peeled and deveined
- 2 cups mixed vegetables (bell peppers, broccoli, snap peas, carrots)
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- Heat the olive oil in your large skillet over medium-high heat until shimmering.
- Add the minced garlic and ginger, sautéing for about 1 minute until fragrant.
- Introduce the shrimp to the skillet, and cook for 3-4 minutes until pink and opaque.
- Toss in the mixed vegetables with the soy sauce, stir-fry for another 5 minutes until tender-crisp.
- Season with salt and pepper to taste.
- Serve over cooked rice or noodles, garnished with sesame seeds or green onions if desired.
Notes
Make-ahead tips: Prep vegetables and marinate shrimp overnight. You can also use an air fryer for the shrimp.
