Description

A comforting casserole featuring lean ground turkey and colorful vegetables, topped with melted cheese and served warm.


Ingredients

  • 1 lb ground turkey
  • 2 cups mixed vegetables (bell peppers, zucchini, carrots)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup cooked rice or quinoa (optional)
  • 12 tbsp olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat and add chopped onion and minced garlic.
  3. Cook until softened, stirring occasionally.
  4. Add the ground turkey, Italian seasoning, salt, and pepper. Brown the turkey, breaking it up.
  5. Stir in mixed vegetables and cooked rice or quinoa, if using.
  6. Transfer the mixture to a greased casserole dish and spread it evenly.
  7. Top with shredded cheese.
  8. Bake for 25-30 minutes until cheese is melted and bubbly.
  9. Serve warm and enjoy!

Notes

Make-ahead the casserole and store in the fridge overnight for a quick bake the next day.
