- 1 lb ground turkey
- 2 cups mixed vegetables (bell peppers, zucchini, carrots)
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 cup cooked rice or quinoa (optional)
- 1–2 tbsp olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat and add chopped onion and minced garlic.
- Cook until softened, stirring occasionally.
- Add the ground turkey, Italian seasoning, salt, and pepper. Brown the turkey, breaking it up.
- Stir in mixed vegetables and cooked rice or quinoa, if using.
- Transfer the mixture to a greased casserole dish and spread it evenly.
- Top with shredded cheese.
- Bake for 25-30 minutes until cheese is melted and bubbly.
- Serve warm and enjoy!
Notes
Make-ahead the casserole and store in the fridge overnight for a quick bake the next day.
