Description

A vibrant salad featuring crunchy edamame, creamy feta, and sweet cherry tomatoes, perfect for a light lunch or side dish.


Ingredients

  • 2 cups edamame (shelled)
  • 1 cup feta cheese (crumbled)
  • 1/4 cup red onion (diced)
  • 1/4 cup cherry tomatoes (halved)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Combine the shelled edamame, crumbled feta cheese, diced red onion, and halved cherry tomatoes in a large bowl.
  2. Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl.
  3. Pour the dressing over the salad mixture and toss gently to coat.
  4. Garnish with freshly chopped parsley and serve immediately or chill for about 30 minutes.
