- 1 cup shredded sharp cheddar cheese (or pepper jack)
- ½ cup diced red onions
- ½ cup sliced jalapeños (optional)

Instructions
- Make the Firecracker Sauce: In a small bowl, whisk together the mayonnaise, sriracha, honey, smoked paprika, garlic powder, and fresh lime juice until smooth.
- Prep the Toppings: Dice the red onions, slice the jalapeños, shred the cheese, and chop the cilantro.
- Heat the Grill: Preheat your grill to medium-high heat (about 400°F).
- Grill the Hot Dogs: Place the hot dogs on the grill for about 5-7 minutes until charred.
- Toast the Buns: During the last 2 minutes, place buns cut-side down on the grill.
