Description

A colorful and nutritious salad featuring mixed greens, soft-boiled eggs, salmon, and a vibrant basil vinaigrette, inspired by the flavors of the French Riviera.


Ingredients

  • 2 cups mixed greens (arugula, romaine, and spinach)
  • 2 medium potatoes, boiled and diced
  • 4 soft-boiled eggs, halved
  • 1 cup haricots verts, trimmed and blanched
  • 1 can of salmon (or cooked fresh salmon)
  • 1 tomato, cut into wedges
  • 1/4 cup black olives (Kalamata)
  • Basil vinaigrette (for dressing)
  • Salt and pepper to taste

Instructions

  1. Arrange the mixed greens on a large serving platter.
  2. Top with the diced potatoes evenly.
  3. Add the halved eggs over the vegetables.
  4. Layer on the blanched haricots verts.
  5. Add the flaked salmon and nestle in the tomato wedges.
  6. Finish with a sprinkle of black olives.
  7. Drizzle with basil vinaigrette and season with salt and pepper.
  8. Serve immediately to enjoy fresh flavors.
