Description

A delightful dessert featuring layers of flaky puff pastry, creamy mascarpone, and vibrant seasonal fruits, perfect for any occasion.


Ingredients

  • 1 sheet French puff pastry (thawed)
  • 1 large egg
  • 1/4 cup large granulated sugar
  • 2 cups raspberries (fresh or frozen)
  • 1/4 cup white granulated sugar
  • 8 oz mascarpone cheese
  • 1 tsp vanilla extract (or vanilla bean paste)
  • Pinch of salt
  • 3/4 cup confectioner’s sugar
  • 1 1/2 cups heavy cream (well-chilled)
  • 3 cups mixed fruit and berries (such as raspberries, strawberries, nectarines, blueberries, mango, blackberries, cherries, kiwi, peaches)

Instructions

  1. Thaw the puff pastry sheet according to the package instructions.
  2. Preheat your oven to 400°F (200°C).
  3. Roll out the pastry on a lightly floured surface and cut it into rectangles.
  4. Brush each piece with a mixture of beaten egg and a splash of water.
  5. Sprinkle with granulated sugar and bake for 15-20 minutes until golden brown.
  6. Cool completely on a wire rack.
  7. In a small saucepan, combine raspberries and white sugar to make a raspberry sauce.
  8. In a large bowl, combine mascarpone cheese, vanilla extract, and a pinch of salt; whisk until smooth.
  9. Whip the chilled heavy cream with confectioner’s sugar until soft peaks form.
  10. Fold the whipped cream into the mascarpone mixture.
  11. Assemble the dessert with layers of pastry, mascarpone cream, raspberry sauce, and mixed fruit.
  12. Dust the top layer with confectioner’s sugar before serving.

Notes

For a delightful twist, consider adding a layer of chocolate ganache or citrus zest to the mascarpone cream.
