- 1 sheet French puff pastry (thawed)
- 1 large egg
- 1/4 cup large granulated sugar
- 2 cups raspberries (fresh or frozen)
- 1/4 cup white granulated sugar
- 8 oz mascarpone cheese
- 1 tsp vanilla extract (or vanilla bean paste)
- Pinch of salt
- 3/4 cup confectioner’s sugar
- 1 1/2 cups heavy cream (well-chilled)
- 3 cups mixed fruit and berries (such as raspberries, strawberries, nectarines, blueberries, mango, blackberries, cherries, kiwi, peaches)
Instructions
- Thaw the puff pastry sheet according to the package instructions.
- Preheat your oven to 400°F (200°C).
- Roll out the pastry on a lightly floured surface and cut it into rectangles.
- Brush each piece with a mixture of beaten egg and a splash of water.
- Sprinkle with granulated sugar and bake for 15-20 minutes until golden brown.
- Cool completely on a wire rack.
- In a small saucepan, combine raspberries and white sugar to make a raspberry sauce.
- In a large bowl, combine mascarpone cheese, vanilla extract, and a pinch of salt; whisk until smooth.
- Whip the chilled heavy cream with confectioner’s sugar until soft peaks form.
- Fold the whipped cream into the mascarpone mixture.
- Assemble the dessert with layers of pastry, mascarpone cream, raspberry sauce, and mixed fruit.
- Dust the top layer with confectioner’s sugar before serving.
Notes
For a delightful twist, consider adding a layer of chocolate ganache or citrus zest to the mascarpone cream.
