Ingredients
Scale
- 2 to 2 1/2 lbs salmon fillet
- 1/2 cup salted butter (melted)
- 1 1/2 to 2 tsp sea salt & ground black pepper
- 3 tbsp fresh dill
- 1 tbsp Dijon mustard
- 3 garlic cloves (pressed or grated)
- 1 large lemon (zest and juice)
- 1 tbsp capers (finely chopped)
- 1 bundle asparagus (about 15 to 20 spears)
- 1 to 2 tbsp olive oil & sea salt (to taste)
- Zest from 1 lemon
- 1 to 2 cedar planks (pre-soaked)
Instructions
- Soak your cedar planks in water for at least one hour to avoid burning during grilling.
- Combine the melted butter, dill, Dijon mustard, garlic, lemon juice, chopped capers, and sea salt in a bowl to make the marinade.
- Lay the salmon on a clean surface and generously pour the marinade over it, letting it soak in.
- Preheat your grill to medium-high heat and place the soaked cedar plank on the grill until it begins to smoke.
- Position the marinated salmon skin side down on the plank and grill for 15-20 minutes or until flaky.
- Prepare the asparagus by trimming the ends, tossing with olive oil, sea salt, and lemon zest, and grill alongside the salmon for the last 9-12 minutes.
- Serve the salmon from the plank with reserved marinade drizzled on top.
Notes
Make-ahead: Prepare the marinade and let the salmon marinate a few hours in advance. If you don’t have a grill, bake at 375°F for 20-25 minutes.
