Description

A colorful and flavorful dish featuring tender chicken, fresh vegetables, and a hint of feta cheese that transports you to the sun-soaked terraces of Greece.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 lemon, juiced
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1/2 cup feta cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with oregano, lemon juice, salt, and pepper.
  3. Cook the chicken in the skillet for about 6-7 minutes on each side until golden-brown.
  4. Remove the chicken from the skillet and set aside.
  5. Sauté the minced garlic in the skillet for about 1 minute until fragrant.
  6. Add the cherry tomatoes, cucumber, and red onion, cooking for an additional 3-4 minutes.
  7. Combine the sliced chicken back into the skillet and mix gently.
  8. Garnish with crumbled feta cheese and fresh parsley before serving.

Notes

Make-ahead tips include marinating chicken overnight and prepping vegetables in advance. Can cook chicken by air frying or baking for different textures.
