- 1 cup Coconut milk
- 1/4 cup Soy sauce
- 1/4 cup Brown sugar
- 2 cloves Garlic, minced
- 1 tablespoon Ginger, grated
- 2 tablespoons Lime juice
- Peanut sauce, for serving
Instructions
- Whisk the marinade: In a bowl, combine coconut milk, soy sauce, brown sugar, minced garlic, grated ginger, lime juice, and a pinch of salt. Whisk until smooth.
- Marinate the chicken: Cut the chicken breasts into bite-sized pieces. Place the chicken in the marinade, ensuring every piece is coated. Let it marinate in the fridge for at least 30 minutes.
- Thread onto skewers: Take the marinated chicken pieces and carefully thread them onto soaked skewers.
- Preheat the grill: Set the grill to medium-high heat.
- Grill the skewers: Place the skewers on the grill and grill for about 10-15 minutes, turning occasionally, until fully cooked.
- Serve with peanut sauce: Once cooked, remove the skewers from the grill and serve with a generous drizzle of peanut sauce.
Notes
For richer flavor, marinate the chicken the night before. If using wooden skewers, soak them for at least 30 minutes to prevent burning.
